Description

The Department of Allied Health is a leading provider of undergraduate and postgraduate programmes in Human Nutrition, Dietetics, Exercise and Nutrition Science, Cardiovascular Health and Rehabilitation, and Obesity and Weight Management. Many of our programmes are professionally accredited by the Association for Nutrition and the British Dietetic Association. 

The functional research group for the department is seeking a Researcher with a Masters Degree in Food Science and Technology, or equivalent qualification, and working experience in nanoliposome preparation and analysis, functional foods development and sensory evaluation. The nature of work is highly skilled requiring exceptional problem solving acumen in the area described. 

In collaboration with industrial partners, you will work on a project called ‘NutriNano: a feasibility study on application of natural and liposomal bioactive ingredients for improved nutrition’, which is funded by an ‘Innovate UK’ grant valid until 31st August 2025.  

Liposomes (small oil droplets) exist in many foods naturally in the form of emulsions, such as human milk. This project will aim to produce various readily consumed foods and supplements containing O3LC-PUFAs with improved bioaccessibility and bioavailability. 

This project will help to pave the way towards the development of a wider range of functional foods. These have potential promise to help close the omega-3 dietary gaps and promote health in adults and children.
